Cynthia’s Back-Breaking Vegetable Stew

Last week, I changed from being a vegetarian to being a vegan. (see previous post).

Being a vegetarian was easy. I just ate everything except animals for practically all of my adult life. Now, it will be a little bit more difficult.

I will now eat everything except animals and animal products. That means no milk, no eggs, no cheese, no yogurt, etc, and I will have to be a little creative.

I hardly ever have followed a recipe. I have always just thrown stuff that I like together, and I’ve never written down what I did.

This morning, I am going to try to make some hearty vegetable stew. In the past, I would have dumped in some milk, butter and cheese, and called it chowder. This is going to be fun seeing how well it will turn out now.

I’m going to write down what I did in case it turns out good, and I want to make it again.

Now I’m going to give my aching back a break ( from standing up too long in the kitchen, hence the name of my stew) and watch part of a Barbara Stanwyck movie before I start slicing my ingredients.

Cynthia’s Back-Breaking Vegetable Stew

Ingredients:

One can sweet corn,
one can Italian stewed tomatoes,
one and one half potatoes,
3 spears celery,
one half onion,
3 medium carrots,
3 small leaves kale,
3 small leaves spinach,
3 small leaves cilantro,
3 small florets broccoli.

Preparation:

Slice vegetables thinly in food processor,
Put everything in crock pot on high setting,
Cross your fingers.
Hope for the best.

I will try some for lunch and see how it turns out
